"LA CHANDELEUR" : CREPE DAY IN FRANCE

February 2nd is always "crêpe day" in France. Not because it is a delicious feast and an economical one at that, but because it is the Catholic holiday of Candlemas which  is a feast to commemorate the purification of the Virgin Mary and the presentation of baby Jesus. In France, this holiday is called la Chandeleur, Fête de la Lumière,* or jour des crêpes.

CHANDELEUR sayings :

À la Chandeleur, l'hiver cesse ou reprend vigueur
On Candlemas, winter ends or strengthens

À la Chandeleur, le jour croît de deux heures
On Candlemas, the day grows by two hours

Chandeleur couverte, quarante jours de perte
Candlemas covered (in snow), forty days lost


Rosée à la Chandeleur, hiver à sa dernière heure
Dew on Candlemas, winter at its final hour


And there you have the recipe,a simple one easy even for children who enjoy usually to be in the kitchen for this once .

Preparation time: 20 minutes
For 30 crêpes ( never enough !):

- 3 eggs
- 1/2 dose of yeast ( levure chimique)
- 1 pinch of salt
- 1 250g flour
- 1/2 liter of milk
- 3 tablespoons of warm water

This recipe doesn't need any waiting time. Thank God for that as you're already craving for those divine lace crepes. Mix all the ingredients in a big salad bowl with a whisk ; warm up a saucepan , add a little oil and when hot, pour a large tablespoon of the crepe mix, when you see a few bubbles, flip it around.

Your table by this time is covered with all the jams you have in your pantry, with a huge jar of Nutella, with lemon and fine sugar and with a mountain of butter.
Spread it all on !!!!!!!!! And enjoy !!!!!
